The blend is made up of grapes from 2011, from 35-year-old vines.
Maturation 24 months on lees
Tasting notes : The color is light yellow, with golden hues and the perlage is rich with small bubbles.
The initial aromas are ripe, dominated by apricots and plums, followed by spices and honey, with delicate notes of candied fruit, bergamot and orange peel.
The taste is fruity, fresh, predominantly yellow peaches and just a touch of pepper. An excellent champagne for an aperitif.

On the palate the wine is fullish, crisp and focused, with excellent mid-palate depth, very refined mousse, bright acids and really outstanding length and grip on the complex finish. The Paul Bara is all refined elegance and great intensity of flavor. A truly superb bottle of Brut NV. "
